Family Friendly Ground Beef Soup Recipe

Everyone loves a warm soup when the chill of fall is in the air. A soup is almost always inexpensive and easy to make too.

Ground Beef Soup












Try this simple Swedicized goulash type soup recipe if you have a large family, or scale the ingredients down to meet your own needs.

INGREDIENTS:
Serves 8

* 4 yellow onions, finely chopped
* 400 - 500 grams ground beef
* butter for frying
* 4 teaspoons paprika powder
* 6 tablespoons tomato puree
* 2 cans crushed tomatoes
* 1 liter meat stock
* 6 raw potatoes, peeled and cut into small dices
* 1 l milk
* salt, pepper and sambal oelek to taste
* sugar (optional)
* parsley, finely chopped
* garlic creme fraiche (optional)

METHOD:
1. Heat a large saucepan and add butter,
2. Saute onions about 5 minutes.
3. Brown ground beef in a frying pan, breaking it up into small pieces,
4. Then transfer the browned ground beef into the soup saucepan.
5. Add paprika powder, tomato puree, crushed tomatoes, and meat stock.
6. Bring everything to a boil and add potato dices.
7. Let simmer on low heat about 15 minutes.
8. Add the milk and bring the soup to boiling point.
9. Taste for seasoning, (salt, pepper, sambal oelek and sugar), sprinkle with parsley, and garnish each serving portion with a dollop of garlic crème fraiche, if you like.

If the canned tomatoes are tart or sour, cut out the sourness with sugar.

Some of you may find this soup too plain and not a complete meal on its own. You can always make changes to a recipe. Feel free to add more of ingredients you like.

Besides, you can serve the soup with all kinds of accompaniments: Garlic bread, toasted sourdough bread, all kinds of side dishes, or whatever you are craving.

Fruity: I wouldn't mind adding colored bell peppers to the soup but my grandchildren treat vegetables like an enemy.
