What to do with leftover mushroom stew..

This is a time saving idea.. Great sandwiches for a cold night. You can make as many sandwiches as you want all at once.















Hot Mushroom Sandwiches

INGREDIENTS:
Serves 2-4
* 4 slices of white bread
* butter
* 4 small tomatoes, cut in slices
* mushroom stew
* 8 slices of Swiss Cheese, or any other hard cheese
* 2-4 tablespoons parsley, chopped
* salt and pepper (optional)

METHOD:
1. Preheat oven to 250° C = 480° F.
2. Evenly butter around the crusts of the 4 slices of bread (only one side).
3. Place butter-side up on a papered baking sheet.
4. Cover each bread slice with 4 slices of tomatoes.
5. Spread mushroom stew over the tomato slices.
6. Arrange two slices of cheese on the mushroom stew.
7. Bake in preheated oven for 5 to 10 minutes, or until cheese is perfectly melted.
8. Remove from oven and sprinkle parsley on top.

Make your mushroom stew from scratch if you don't have leftovers. This recipe will be enough for 4 sandwiches.

INGREDIENTS:
* 200 grams mushrooms of your choice, sliced
* 2 tablespoons butter
* 1 ½ tablespoon plain flour
* 100 ml milk
* 150 ml cream
* salt and pepper

METHOD:
1. Heat butter in a heavy bottomed frying pan over medium-high heat.
2. Cook mushrooms in the pan until their liquid evaporates.
3. Add more butter to the mushrooms, and saute for 10-15 minutes.
4. Sprinkle flour over the mushrooms and give it all a stir.
5. Pour milk and cream into the pan, simmer and stir until thickened, ab 10 minutes.
6. Salt and pepper to taste, and then set aside to cool a little.
