Oven Omelette with Wild Mushroom Stew

There are more than 10.000 species of mushrooms. Only a few are poisonous. I am a collector of wild mushrooms but I am only acquainted with the characteristics of very few species, and avoid all others.


When I discovered this cute little mushroom near one of the spruces in my garden, I knew where to go to find more and better ones.















It is a "newly born" False Saffron Milk-cap (Lactarius deterrimus). The Swedish name is "Granblodriska". That's the only name I need to know. It is not only edible, it is delicious with its peppery taste.

If you are looking for something that can be served for breakfast, lunch or dinner, try this recipe. Remember to taste the stew as you make it and season it the way you like.















Mushroom Stew
3 dl/300 ml cleaned, chopped false saffron milk-cups
2 tablespoons butter
1 tablespoon flour
3 dl/300 ml cream
½ teaspoon salt
1 ml pepper

METHOD:
1. Put mushrooms into a heavy-bottomed frying pan and heat slowly.
2. Stir till liquid comes out.
3. Saute until the liquid evaporates.
4. Raise the heat, add butter, and fry 3-4 minutes more.
5. Sprinkle with flour and give it a stir
6. Add cream, a little at a time, stir and simmer uncovered on low heat for 20-30 minutes.
7. Season with salt and pepper to taste.

Serve over oven omelet.

Oven Omelet
* 3 eggs
* 3 teaspoons plain flour
* ½ teaspoon caster sugar
* 3 3/4 dl/375 ml milk
* ab. ½ teaspoon salt and pepper

METHOD:
1. Bring the milk to a boil and cool.
2. Beat together milk, flour, salt, pepper, sugar and eggs.
3. Pour batter into greased baking dish.
4. Bake in the middle of the oven at 200 degrees 350 degrees for 20 minutes.
5. Take the omelet out of oven and spread surface with mushroom stew.
6. Finally sprinkle with a couple of tablespoons coarsely chopped flat-leafed parsley.
