Easy Cooked Salmon with Herb Sauce

Cooked SalmonFat food, sweets and sedentary - not a good combination for anyone.

Eating and drinking more calories than I have burnt up has caused me weight gain during the Christmas Holiday. Now I have to stay away from bad fat and sweets for a while and stick to low fat foods like fish.

INGREDIENTS:
Serves 4

* 600 grams fillets of salmon, fresh or frozen, cut into 4 portions
* 2 liters (2000 ml) water
* juice of lemon
* sugar
* salt
* dill sprigs

THE HERB SAUCE:
* 2 tablespoons dill, chopped
* 2 tablespoons parsley, chopped
* 2 tablespoons chives, chopped
* 3 dl (300 ml) crème fraiche
* salt
* pepper

METHOD:
1. Pour the water into a large saucepan.
2. Add juice of lemon, sugar and salt - the water must taste like sweet and sour sea water.
3. Bring the "sea water" to the boil.
4. Place the salmon pieces in the boiling water.
5. Slide the saucepan off the heat and cover with a lid.
6. Let fresh salmon steep in the hot liquid for 7-8 minutes (frozen ab. 20 minutes).
7. Combine the sauce ingredients, taste with salt and pepper.

Lift the fillets of salmon from the water and arrange with dill sprigs on a plate. Spoon the sauce over the fish, serve with cooked potatoes and a salad.

Cooking the salmon this way is forgiving. It is the best way. The salmon can't be overcooked. This method never dries the fish out.

jag älskar lax och jag vet en annan sås som skulle passa bra till den här rätten, kanske ännu bättre till grillad lax. jag kan inte receptet i huvudet men såsen är enkelt sett den klassiska hollandaisesåsen med örter i. T ex. dill, timjan etc. Riktigt god är den!

Patricia: Yes, I can really recommend this salmon. Makes it easy to cook fish perfectly.

Thiago: Jag tror också att en hollandaise med örter skulle passa jättebra till den här laxen. När jag gått ner till min rätta vikt igen kan jag börja äta "smöriga" såser igen.

Fruity: Have you tried the Scandinavian dish "Gravlax", consisting of raw salmon cured for 1-2 days in salt, sugar, and dill? It is served as an appetizer, thinly sliced, accompanied by a dill and mustard sauce, either on bread of some kind, or with boiled potatoes. Absolutely delicious!

Pamn: Just make sure to taste the cooking water before adding the salmon fillets. Sweet-and-sourish like the taste of sea water.

Johan: I'm glad you like *gravad' salmon. The English language has adopted the name, 'gravlax'.
Some people can't eat it, because it's raw fish, they say.

Never try Scandinavian dish before. Can't find any outlet that sells it. Mostly raw salmon from those Japanese outlets...

By the way, I would like to win that competition but I don't think they ship to Sweden, though.
