Easiest Oven Roasted Chicken
A couple of years ago, I found this recipe somewhere - probably a Food Magazine, but I'm not sure. I liked it. Earlier it had always been a challenge to ovenroast chicken that was not too burnt or too dark on the outside, but still cooked on the inside. The secret is painting the chicken skin with soy and honey at the very end.
Crispy, roast chicken skin is delicious. My husband finds it the best part. So, don´t remove the skin. (Of course, you can always remove the skin from you portion, if you are on a diet. Chicken skin contains a great deal of fat, but there is no considerable difference in calories between removing the skin before or after roasting).
This isn´t a complicated recipe. With just a few ingredients you can make a tasty chicken dinner with things you most likely already have on hand. A chicken that is roasted with nothing but butter, salt and pepper.
INGREDIENTS:
Serves 4 - 5
1 kg (1000 grams) chicken drumsticks
PAINTING I:
ab. 50 - 100 grams butter, melted
1 teaspoon salt
½ teaspoon pepper
PAINTING II:
1 dl (100 ml) honey
½ dl (50 ml) chinese soy sauce
2 cloves of garlic, minced
METHOD:
1. Preheat oven to 175 - 200 degrees C. (ab. 400 F).
2. Place the chicken in a shallow baking pan.
3. Brush the chicken with half the melted butter.
4. Sprinkle with salt and pepper to taste.
5. Brush with remaining butter while roasting.
6. Roast in the oven for 30-40 minutes, or until juices run clear.
7. Meanwhile mix honey, soy and minced garlic.
8. Remove the chicken from the oven, paint them with the honey mixture.
9. Put the pan back into the oven again, raise the temperature to 225 degrees C (ab. 425 F), and roast for ab. 5-10 minutes more, or until you find the chicken nicely browned.
Serve with boiled rice or potato wedges, and a fresh salsa salad.

The Christmas buffet in Sweden is quite different. Usually we don´t have turkey for Christmas.
However, two years ago I spent Christmas in Stockholm (not at home), and we purchased a turkey for the first time, stuffed and roasted the bird according to all the established rules. It was nice for a change.

I love the hint on how to make the chicken look nicely brown without burning it.
And my husband NEVER lets me remove the skin - he says I'd ruin the dish if I did that. So I remove the skin only in my dish.
Patricia: Yes, this is a good hint. I really don´t like meat to be too burnt. I agree with your husband. The skin protects the chicken meat from drying out during roasting.
Don't the chicken skins retain the fat?
What kind of microwavable recipies have you got for a widower klutz who can't cook, lives mostly out of cans?
Jack: Oh yes, there are plenty of fat in and under the chicken skins, but most of the fat is in the skin. People who are on a diet usually trim the skin away before eating the chicken meat in order to eliminate at least about half the fat.
So you think you can´t cook? I don´t think so. Anyone who can read a recipe can. I have taught mildly retarded pupils to cook from scratch.
Unfortunately, I don´t have any microwavable recipes because I don´t use a microwave oven for cooking food.
Try a stir-fry recipe for instance. It has got to be the easiest meal to make for anyone.

I do believe many families have turkey for Christmas. Nowadays Sweden is a multicultural country. The Swedish kitchen has become very international.
I think marinating chicken beef or pork etc.. b4 grill it is much delicious.. it's more tastier..

Hi Pavan:
Basic roasted potato wedges
4 potatoes
4 tablespoons melted butter
salt
Preheat oven to 225 degrees Celsius.
Wash the potatoes. You don't have to peel them. Cut them in 1/2 lengthwise, then slice in thirds down it's length, making 3 wedge-shaped pieces.
Cook the wedges for 3 minutes in unsalted boiling water.
Drain and pat dry with paper towels.
Butter a baking dish large enough to hold the potatoes side by side in a single layer.
Drizzle with melted butter and toss potatoes to coat.
Sprinkle with salt.
Roast them in the center of the oven for 15 minutes, turn them and roast another 15 minutes. They should be soft inside, crisp and brown outside. However it depends on the size of the wedges and what particular kind of potato.
I've been roasting chicken this way for years, but I never added the extra, only just salt and pepper, and have thought that was great. I think I need to revisit my recipe after seeing yours, which sounds delicious.
Daddy Cooking: Honey and soy marinades get easily burnt... so it's better to brush on marinade when the chicken is about done.
