Chicken and Broccoli Soup with Horseradish Cream Whip

Serves 4


2 fillets of chicken
1 yellow onion
8-10 dl chicken- or hen stock
400 g broccoli
2 tablespoons butter
2 tablespoons flour
1 tablespoon fresh thyme, rosmary or sage
salt & pepper


FOR THE HORSERADISH CREAM:
1 dl heavy cream
2-3 teaspoons finely grated horseradish

Cut the chicken fillets into small pieces.
Peel and chop the onion.
Cut the broccoli into small florets.
Bring the stock to a boil in a large pot.
Add onion, chicken and broccoli.
Simmer for about 5-8 minutes.
Salt, pepper and herbs to taste.
Mix butter and flour together.
Put it in the pan, stirring.
Cook for a couple of minutes.
Whip cream until stiff peaks form.
Fold in grated horseradish until well mixed.
Spoon into a bowl and pass at the table.
